Vegetable Quiche

Ingredients

Pre-cooked short crust Pastry or 6oz plain flour/175g hard margarine 1 onion 125g grated Cheese Broccoli & Sweetcorn 2 Eggs 250ml Single Cream Salt & Pepper

Method

If making your own pastry, add the flour to a bowl and mix in the butter by rubbing gently to resemble breadcrumbs.

Add 3 tablespoons of cold water and mix together to make a ball.

Roll out the pastry on a lightly floured board and line a flan case.

Chill in the fridge whilst you prepared the mixture.

Pre-heat the oven to 220c.

Prick the bottom of the pastry with a fork, this is to prevent it bubbling when in the oven. Bake for 10 mins.

Reduce the oven to 180c.

In a pan heat a tablespoon of oil and fry the onions until golden brown.

Place onto the cooked pastry with the chopped or drained veg and cheese.

In a bowl whisk the eggs, cream, salt and pepper. Pour over the mixture and place back into the oven for 20-30 mins or until golden brown.
