Stuffed Tomatoes

Ingredients

2 large tomatoes

Fresh basil leaves

2 tablespoon red pesto

2 chargrilled red peppers

1 large mozzarella ball

From Aldi Store (This will be enough for 2 children)

Method

Preheat oven to 180c/gas 6.

Wash, dry tomatoes and slice the tops off. Keep the lids to one side.

Using a small spoon scoop out the contents and put through a sieve and keep the juice to one side.

Slice the mozzarella into thin slices.

Place the bottoms of the tomatoes into an oven proof dish.

Add a couple of slices of cheese, a few basil leaves.

Top with a slice of red pepper, and few more slices of cheese.

Finish with pesto. Place the lid back ontop.

Pour a little of the juice over the top and bake for 20 minutes.

Once cooked serve with toasted ciabatta.
