Fish Cakes

Ingredients

2 large Potatoes
2 cloves Garlic
1 teaspoon of chopped Parsley or Coriander
1 teaspoon of dried Thyme
Pinch of Red Chili Flakes
½ finely cubed Onion
1 tablespoon Oil
1 can of Tuna or Salmon (drained)
1 tablespoon Flour (any type)
1 Egg

Method

Put 2 peeled and cubed potatoes into a pan of cold water, cover and bring to the boil. Cook for approx. 10 mins or until the potatoes are cooked through.

Drain potatoes once cooked and leave to one side.

In a frying pan heat 1 tablespoon of oil and add chopped onions, chopped garlic, thyme, chilli flakes and tuna. Cook until the onions have browned.

Combine the mixture to the potatoes and make individual patties using a little flour to prevent them sticking.

Place onto a clean plate.

Give the frying pan a quick wash and dry well. Add 2 tablespoons of oil and heat.

Carefully place the patties into the hot oil and cook for approx.

Using 3 bowls and seasoned flour in one, beaten egg in the second and breadcrumbs in the third.

Taking one patty at a time, dip into the flour, then the egg and finally into the breadcrumbs.

Fry for 1 min on each side or place into a hot oven to brown all over.

Remove from the pan really carefully to prevent breaking.

Serve with steamed carrots or peas & a fresh crisp salad.
